Herb and Garlic Chicken Bake

You must know by now that my husband and I are big fans of garlic and use it in most of my recipes.  I am always looking for new things to make and I came up with this idea today for something different.

Ingredients
  • Chicken Breast - amount of your choice - I used 6
  • Garlic Herb Marinade (recipe below) or you can buy one of your favs
  • Rice of your choice - I love the brand Zatarain's and used the Garlic & Herb Rice Mix for this dish and I added kidney beans to the rice
  • Bread Crumbs
  • 3 Tbsp butter or margarine
  • 2 1/4 Cup Hot Water
Garlic Herb Marinade
Ingredients
  • 1/3 cup water
  • 1/3 cup vinegar
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried Italian-style seasoning
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Directions


In a bowl, combine the water, vinegar, oil, garlic, thyme, Italian-style seasoning, poultry seasoning, rosemary, salt and ground black pepper, mix well.
Directions for baking
Preheat oven to 375 degrees.  Place butter or margarine in baking dish.  Add the hot water.  Stir in the rice mix and spread evenly in pan.  Place chicken on top of rice mixture.  Pour marinade over chicken.  Sprinkle chicken with bread crumbs.  Bake for an hour.

It was absolutely delish!
